Viral Lettuce Wrap with Tuna

What you need:

• iceberg lettuce 
• 1 small can or 1/2 a large can of drained tuna
• 2 tbsp cubed tomato 
2 tbsp cubed cucumber  
• 1-2 tbsp avocado 
• 1 tsp mayo 
• 1 tbsp balsamic vinegar
• 1 tbsp drained capers 
• pinch of salt 
• parchment paper 

Method:

• wash and dry your iceberg, tomato and cucumber 
• layer a few iceberg lettuce leaves together forming the wrap
• mix your tuna with cubed cucumber, tomato, mayo and balsamic 
• add avocado + a pinch of salt and mix again 
• *option to add dijon mustard* 
• to your iceberg cup add tuna mix
• from the bottom of the iceberg cup, slowly roll keeping it packed 
• once rolled, wrap with parchment paper and tuck in the sides
• cut the wrap in half and enjoy!

 
Protein: approx 28-30g
