Viral Chicken Lettuce Wraps

 

What you need:

• iceberg lettuce 
• 1 cup arugula 
• half a chicken breast shredded (you can add more if you wish)
• 2-3 slices of tomato 
• 2-3 slices of cucumber 
• 1-2 tbsp cooked lentils 
• 1-2 tbsp avocado 
• 1 tsp mayo 
• 1 tsp dijon mustard 
• wedge of lime 
• parchment paper 

Method:

• wash and dry your iceberg, arugula, tomatoes and cucumber 
• layer a few iceberg lettuce leaves together forming the wrap
• shred your chicken breast and mix with 1-2 tbsp of mayo 
• to your iceberg wrap add arugula, sliced tomato, sliced cucumber
• next add your chicken, cooked lentils, avocado and dijon
• from there bottom of the iceberg cup slowly roll keeping it packed 
• once rolled, wrap with parchment paper and tuck in the sides
• cut the wrap in half and enjoy!
