What you need:
- 1 tortilla
- 2-3 eggs
- pinch of salt
- 2/3 cup cottage cheese
- spinach
Method:
- to a bowl, add eggs, salt and beat until combined
- to a pan over medium heat add eggs and let cook for a few minutes
- add the tortilla overtop and flip
- add cottage cheese, spinach & enjoy!
