Summer Salad

What you need: 
  • 2 cups chopped romaine lettuce 
  • 3/4 cup cherry tomatoes 
  • 3/4 cup chopped cucumbers
  • 3/4 cup cubed yellow or orange peppers 
  • 3/4 cup corn 
  • 1/2 cup thinly sliced red onion
  • 1/2 cuped avocado 
  • 1 cup whole wheat cous cous 
  • 1 shredded oven roasted chicken breast

Dressing: 

  • 1 clove minced garlic
  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar 
  • 1 tbsp honey dijon mustard 
  • salt & peppe to taste

Method:

  • chop your vegetables so they're about the same size
  • for the onion, thinly slice
  • cook cous cous as per instructions on package
  • use previously cooked chicken or store bought and shred
  • add everything to a bowl, dress, toss and enjoy! 

 Protein: approx 23g per serving (serves 2-3)
