What you need:
- 2 cups chopped romaine lettuce
- 3/4 cup cherry tomatoes
- 3/4 cup chopped cucumbers
- 3/4 cup cubed yellow or orange peppers
- 3/4 cup corn
- 1/2 cup thinly sliced red onion
- 1/2 cuped avocado
- 1 cup whole wheat cous cous
- 1 shredded oven roasted chicken breast
Dressing:
- 1 clove minced garlic
- 1/2 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 1 tbsp honey dijon mustard
- salt & peppe to taste
Method:
- chop your vegetables so they're about the same size
- for the onion, thinly slice
- cook cous cous as per instructions on package
- use previously cooked chicken or store bought and shred
- add everything to a bowl, dress, toss and enjoy!
