Sesame & Mushroom Barley

 

What you need:

• 1 cup pot barley
• 3 cups veggie or beef broth 440 g cremini mushrooms
• 1 tsp extra virgin olive oil
• 1.5 tsp sesame oil
• 1 tsp salt
• 1 tsp greek yogurt
• 1/4 tsp sesame seeds
• 1 tsp cilantro

Method:

• wash your barley until water runs clear. add to pot with three cups broth and bring to a boil. Reduce to low heat and cook for 40 mins
• 15 mins before barley is done, wash and cut your mushrooms
• to a skillet over medium heat add evoo + mushrooms and sautee for 4-5 mins. add sesame oil and cook to your preference
• to a bowl add 3/4 cups barley, 1/3 cup mushrooms, greek yogurt, finish with sesame seeds, cilantro and enjoy!

*if you have meat sauce left over from your tacos, add to your barley before your mushrooms for more protein and a different flavour profile* - one dish two ways
