What you need:
• Evoo or avocado oil
• 1 small yellow onion
• 500g of lean minced beef
• 3-4 cloves of garlic
• 2 tsp Italiano seasoning
• 1 14oz can of diced tomatoes
• 4 cups of chicken broth
• 2 tbsp of balsamic vinegar
• 1 cup of water
• Tortellini - I used 1.5 cups of mini tortellini
• 1/2 cup of almond milk
• 2 handfuls of Swiss chard from @silva_son_produce
• parmesan and chilli flakes
Method:
• start by chopping your onion and garlic (think very small pieces)
• in a large pot over medium heat, heat up evoo - once hot, add onion and sauté for 4 minutes
• add minced beef and cook until no pieces are pink
• add garlic & Italian seasoning and sauté for another two to three minutes
• add diced tomatoes, chicken broth, balsamic vinegar, and water; bring everything to a boil
• once boiling, add in tortellini; for fresh pasta, cook for 5 minutes
• add the almond milk, stir and add in Swiss card
• cook for another 4 minutes and turn off the heat.
Ladle into a bowl, finish with shaved Parmesan and chilli flakes for a little heat and enjoy!
