Pumpkin Breakfast Tacos

What you need:

• 2 @unbunfoods wraps
• 3 eggs
• handful of spinach
• handful of grape tomatoes
• pumpkin (I used pumpkin I had roasted)
• 1/4 avocado
• cilantro
• salt and pepper
• pickled onions (I didn’t add because I forgot but if you love pickled onions - highly recommend adding)

Method:

• in a bowl, add eggs, salt and pepper and beat 
• to a skillet over medium heat add your eggs and cook for 1-2 mins and start scrambling
• add in spinach, grape tomatoes & fold into egg mixture cooking to your desired doneness
• add to your wrap and add chunks of pumpkin
• top with sliced avocado, cilantro, pickled onions (optional) and enjoy!

Protein: approx 36 protein
