Protein Rich Vanilla & Berry Oatmeal Muffins

 

What you need:

• 1
 cup blueberries + half cup blackberries 
• 2 large eggs
• 2/3 cup unsweetened applesauce
• 1 cup unsweetened almond milk
• 1 teaspoon vanilla extract
• 1 cup Genuine Health vanilla protein 
• 3 cups rolled oats 
• pinch salt
• 1 1/2 tbsp mini dark chocolate chips 

Method:

• preheat the oven to 350 Lightly grease a muffin tin with evoo
• in a bowl, whisk together the eggs, applesauce, milk and vanilla extract until fully combined
• in a separate bowl, combine genuine health protein powder, oats and salt
• add the liquid to the oat mixture to combine until combined; add more milk as needed.
• fold in the blueberries & blackberries
• add batter to muffin tins filling each
• bake at 350 20 minutes and then broil for 2 minutes until golden brown
• remove and let cool. Use a small spatula to remove and enjoy! 

Protein: 8g per muffin
