Portuguese Caldo Verde

What you need:

• 6 white potatos
• 1 small white onion
• 1/2 bunch kale / collard greens - I used kale
• 1/3 cup sliced Portuguese sausage - I used mild 1 tsp extra virgin olive oil

Method:

• in a soup pot over low-med heat, add your sausage to sear- 3-5 mins
• while sausage is cooking, peel and shred your potatoes & onion (yes, shred - this makes the process faster) 
• once sausage is cooked to your liking remove from pot
• add the shredded onion and cook for 2-3 mins
• add in 6 cups of water + shredded potatoes + salt and bring to a boil - 10 mins
• while potatoes are cooking, Thinly cut your kaleso they're strips
• once potatoes are cooked, let cool and add to your blender - 30 seconds
• add blended potatoes back to pot and add in shredded kale / collard greens and • • bring to a boil. cook for 5-6
mins.
• add in cooked sausage and stir. taste for salt. add if needed. remove from heat, ladle and enjoy!
