Peppermint Cocoa Zucchini Brownie

 

What you need:  

 2 cups finely grated zucchini - squeeze the liquid out of the zucchini  before putting it into your
1 cup coconut sugar - I play around w/ this and sometimes add less sugar
 1 1/3 cup unsweetened @preschoice applesauce or banana (which I find makes it a lot more dense)
• 2 eggs
 2 teaspoons vanilla
 2/3 cup flour (I used whole wheat flour)
 1 cup of @pranasnacks cocoa powder
 2 teaspoons baking soda
 1 1/2 teaspoons baking powder
 1 teaspoon cinnamon
 1/2 teaspoon salt
 1/2 cup of @enjoylifefoods mini chips
 4-6 squares of @aftereightuki
 1 cup of chopped walnuts

 

Method: 

 Preheat the oven to 350ºF Grease a 9x13 inch pan - I used a loaf pan
 Mix together the zucchini, sugar, applesauce, eggs, and vanilla
 Mix together the dry ingredients - I use a whisk  to ensure that there is no clumping
 Slowly add the dry ingredients to the wet ingredients (a little at a time) again, I use a whisk to combine everything.
 Stir in the chocolate chips, @aftereightuki and/or nuts if using. 
 Bake for 55 minutes - let cool & enjoy!
