Oven-Roasted Veggie Sandwich

What you need:

• 2 slices sourdough bread
• 1/2 red bell pepper
• 1/4 zucchini
• 1/4 eggplant
• 1/2 avocado
• handful arugula
• 2 slices provolone cheese
• 1/2 tsp balsamic glaze

Method:

• chop your veggies, season with salt and roast in the oven at 410 for 30-40 mins - cooking times may very
• turn oven off and keep in oven for 10-15 more minutes so they're really soft  
• remove from oven; while the veggies are cooling off, mash your avocado with lemon juice
• lightly toast your bread and start assembling your sandwich
• to one piece of bread add the smashed avocado and arugula; to the other slice add your cheese, eggplant, peppers & zucchini
• drizzle balsamic glaze over the zuchinni and add them together
• cut in half and enjoy!
