Oven-Roasted Beets & Broccoli

 What you need:

• 1-2 heads of broccoli 2-3 beets
• 3 tbsp tahini
• 3 tbsp water
• 1 tbsp maple syrup
• Juice of 1/2 lemon
• 1/3 cup Pomegranate seeds 2 tbsp pumpkin seeds
• 1/3 cup goat cheese

Method:

** this dish can be for both dinner and lunch.
Make it a complete meal by adding oven-roasted chicken pan-seared salmon or shrimp!

• wash and chop your veggies & preheat oven to 410
• while oven is preheating, blanch your broccoli so it keeps it’s colour when you roast them.
• in a medium pot, bring water to a boil and add broccoli for 2-3 minutes; remove and add to a bowl of water
and ice to stop the cooking process
• season your veggies with evoo & salt & throw into the oven for 35-40 mins (time my vary depending
on your oven)
• while veggies roast, in a bowl add tahini, water, lemon juice and maple syrup and mix until full combined 6. once beets and broccoli are to your liking, add to a bowl, add your dressing, goat cheese, pumpkin seeds 
and pomegranate seeds & enjoy!
