What you need:
2 tbsp evoo
1 med yellow onion
2 medium carrots
2 stalks of celery
2 zucchini
2 cloves of garlic
2 tbsp tomato paste
4-5 sprigs of fresh thyme
1 can of diced tomatoes
2 1/2 cups of vegetable broth
3 cups of water
1 1/2 tbsp coarse salt
1 tsp chilli flakes
1 bay leaf
1 cup pot barley (the twist)
2 cups of fresh spinach
Method:
In a soup pot over medium heat add evoo, onions, carrots, celery and cook for 5-7 mins
Add tomato paste and combine
Add a pinch of salt and cook for 2-3 mins
Add barley, garlic, thyme, canned tomatoes and mix
Next add your broth, water, salt & bay leaves
Bring to a boil and add in your zucchini- reduce and let cook for 20 mins *cooking times may vary*
Add in spinach and cook for another 10 mins
Ladle into a bowl, add a little evoo, finish with chilli flakes and enjoy!!!
