What you need:
2 lbs large shrimp
5-6 onions - sliced
3 cloves garlic - chopped
1-2 head cabbage - chopped
1 can crushed tomatoes
1 spicy pepper
salt to taste
extra virgin olive oil
Method:
to a large skillet over medium to high heat, heat up oil and add sliced onion
add chopped garlic - raise temp to high and cook for 3-4 mins. Reduce to low/heat, cover with lid & continue cooking
in a separate pot over medium/high heat, add 1 cup water + largely chopped cabbage + salt & 1-2 tbsp extra virgin olive oil (this will help soften the cabbage)
Add lid and let steam

to the skillet with onions, add crushed tomatoes & mix to combine
add 2 tsp salt & mix again
add chopped spicy pepper
to onion and tomato mixture, add large deveined shrimp, mix, cover with lid and let cook for 4-5 mins (shrimp cook very quickly)
once cabbage is cooked to your liking - remove from heat and let cool
to a bowl add rice, cous cous or any grain of your choice, spicy shrimp + steamed cabbage. Finish with cilantro and enjoy!
if you like white vinegar, add a tsp to the cabbage with a little evoo - its soo good
