What you need:
- 1lb ground turkey
- 1/4 cup panko breadcrumbs ( I added these but you can omit them)
- 1 tbsp parsley flakes
- 1 egg
- 1/2 tsp onion powder
- 1/2 tsp garlic power
- 1.5 tbsp @goodfoodforgood ketchup
- 1.5 tbsp @kozliksmustard Dijon mustard
- 2-3 tbsp Worcestershire
- pinch of salt
- 1 cup cherry tomato
- 1/2 cup avocado
- 3 cups of black canned drained and rinsed beans
- 2.5 cups of canned corn
- 4 cups of chopped romaine
- Juice of whole lime
- 2 tbsp evoo
- 2 tbsp chives
- 1-2 tbsp capers
Method:
- In a bowl, mix ingredients for turkey and mix until combined
- To a skillet over med-high heat , cook turkey meat
- Next, using this viral chopper from amazon, chop your romaine lettuce
- Slice tomatoes & add to a bowl with lime juice, evoo, chives, salt and mix until combined
- To each glass jar add: 1/3 cup of tomato mixture at the base, 1/8 cup chopped avocado, 3/4 cup beans, 2/3 cup corn, 1 cup of cooled turkey meat, 1 cup greens & a few sprigs of cilantro
Protein: approx 40g protein per serving
