What you need:
• two slices of multigrain, sourdough bread
• 3 eggs
• cooked lentils
• cucumber
• dijon mustard (this is my absolute fave)
• mayo
• arugula
• red leaf lettuce
• salt to taste
• 1/2 tsp of white vinegar
• 1 cup cut up papaya
Method:
• over a low-medium pan, start by scrambling your eggs to your liking
• to your bread, add dijon + mayo
• build your sandwich starting with arugula and red leaf lettuce, eggs cucumber and lentils
• add white vinegar over lentils, close the sandwich
• add papaya to a bowl with a sprinkle of salt and enjoy!
