What you need:Â
• two slices of multigrain, sourdough bread Â
• 3 eggsÂ
• cooked lentilsÂ
• cucumberÂ
• dijon mustard (this is my absolute fave)Â
• mayo
• arugulaÂ
• red leaf lettuce
• salt to tasteÂ
• 1/2 tsp of white vinegarÂ
• 1 cup cut up papayaÂ
Method:
• over a low-medium pan, start by scrambling your eggs to your likingÂ
• to your bread, add dijon + mayoÂ
• build your sandwich starting with arugula and red leaf lettuce, eggs cucumber and lentilsÂ
• add white vinegar over lentils, close the sandwich
• add papaya to a bowl with a sprinkle of salt and enjoy!Â
