What you need:
Turkey meatballs
- 1lb ground turkey
- 1/4 cup panko breadcrumbs
- 1 tbsp parsley flakes
- 1 egg
- 1 tsp onion powder
- 1 tsp garlic power
- 1.5 tbsp @goodfoodforgood ketchup
- 1.5 tbsp @kozliksmustard Dijon mustard
- 2 tsp Worcestershire
- pinch of salt
Bowl:
- 1 small cucumber
- 1-2 vine ripe tomatoes
- cous cous
- gem lettuce
- tzatziki sauce
- olives
- feta cheese
Method:
- to a bowl combine all the ingredients for the turkey meatballs and mix
- form your meatballs to your preferred size and to a cast iron pan over medium heat, add avocado oil and sear turning the meatballs over every minute or so *cooking times will vary depending on your stove
- once the meatballs are browned all the way around, lower the heat to low, cover pan to let the meatballs finish cooking 8-10 min
- cook your cous cous according to instructions on package
- build your bowl with gem lettuce, cous cous, tomatoes, cucumbers, turkey meatballs, tzatziki sauce, olives, crumbled feta cheese and enjoy!
