Deconstructed Spring Roll Lettuce Wraps

What you need: 
  • 1lb lean ground turkey meat 
  • 1/4 cabbage thinly sliced 
  • 2-3 carrots - shredded 
  • 1 tsp extra virgin olive oil 
  • 1 tsp onion powder 
  • 1 tsp garlic powder 
  • 1 tsp ginger powder 
  • 1/2 tsp chilli flakes 
  • salt to taste 
  • 4 tbsp tamari
  • 2 tbsp rice wine vinegar 
  • 1 tsp sesame oil 
  • 1 tbsp maple syrup 
  • juice of one lime 
  • sesame seeds
  • 2-3 spring of oven roasted asparagus (see here) 
  • 1-2 tbsp chopped cashews
  • 1 tbsp chives 
  • 2-3 iceberg lettuce cups 
  • parchment paper 

Method: 

  • to a large skillet over medium heat, add evoo and turkey meat 
  • cook for 2-3 minutes and add, onion powder, garlic powder. ginger powder, chilli flakes and combine until 90% cooked 
  • add coleslaw + shredded carrots and combine - cook for 2-3 mins
  • add tamari, rice wine vinegar, sesame oil, maple syrup and combine
  • layer a few iceberg lettuce leaves together forming the wrap
  • to your lettuce cups add your turkey mixture, chopped asparagus, chopped cashews, chives and fresh lime 
  • from the bottom of the iceberg cup, slowly roll keeping it packed 
  • once rolled, wrap with parchment paper and tuck in the sides
  • cut the wrap in half and enjoy!
