What you need:
• 1 cup whole wheat flour
• 1 cup rolled oats
• 1 tsp baking soda
• 1/2 tsp salt
• 1/4 cup unsweetened apple sauce
• 3/4 cup coconut sugar
• 4 tbsp melted coconut oil
• 1 egg
• 2 tbsp almond milk
• 1 tsp vanilla extract
• 1/3 cup dark chocolate chunks
• 1/3 cup + 1/8 torn fresh raspberries
Method :
• preheat your oven to 350.
• in a bowl combine dry ingredients minus the sugar. in a separate bowl combine wet ingredients plus sugar until fully combined
• add dry ingredients to wet ingredients and fold until combined
• fold in dark chocolate chunks - fold in raspberries
• scoop using tbsp to measure creating a little mound add to parchment lined baking sheet - 9 cookies per sheet
• bake for 12 minutes, turn off oven and leave for another 1-2. remove & let cool for 5-8 minutes & enjoy!
