What you need:
• 2 cups cooked lentils
• 1 medium white onion - diced
• 2 cloves garlic - minced
• 2 tbsp grated ginger
• 3 tbsp tomato paste
• 2 tbsp garam masala
• 1 tbsp paprika
• salt to taste
• 1/4 cup almond milk
• 1 cup organic coconut milk
• cilantro
Method:
• cook your lentils as per instructions on package and set aside
• in a medium skillet over medium heat, add onions and cook until translucent
• add in ginger and garlic and sautee for 2-3 mins
• add tomato paste, paprika and garam masala and mix until combined
• stir in almond milk and add cooked lentils
• reduce to a simmer, add coconut milk and stir until combined
• cook for 3-4 mins, remove from heat, finish with fresh cilantro and enjoy with naan, lettuce cups or, over rice!
