What you need:
- 2 med- large eggplants
- 2 cloves garlic (minced)
- 2 1/2 tbsp lemon juice
- 1/4 cup tahini
- 1/4 cup extra virgin olive oil
- 1/2 tsp salt
- 1 tsp Paprika
Method:
- Start by preheating your oven to 450
- cut eggplant in half brushing each side with extra virgin olive oil and place face down onto a parchment lined baking sheet & add to oven for 35-40 mins
- meanwhile, mince your garlic
- once the eggplant is cooked, let cool and scoop into a bowl
- add lemon juice, garlic, tahini and mix until combined
- add extra virgin olive oil, salt, paprika and mix again
- add to a serving dish, add more paprika and enjoy!
