Creamy Baba Ganoush

What you need:

  • 2 med- large eggplants
  • 2 cloves garlic (minced)
  • 2 1/2 tbsp lemon juice
  • 1/4 cup tahini
  • 1/4 cup extra virgin olive oil
  • 1/2 tsp salt
  • 1 tsp Paprika


Method:

  • Start by preheating your oven to 450
  • cut eggplant in half brushing each side with extra virgin olive oil and place face down onto a parchment lined baking sheet & add to oven for 35-40 mins
  • meanwhile, mince your garlic
  • once the eggplant is cooked, let cool and scoop into a bowl
  • add lemon juice, garlic, tahini and mix until combined
  • add extra virgin olive oil, salt, paprika and mix again
  • add to a serving dish, add more paprika and enjoy!
