Classic Niçoise Salad



What you need:

• greens (I used lettuce from my moms garden + arugula)
• mini potatoes
• tomatoes
• green beans
• tuna
• kalamata olives
• capers
• jammy eggs
• evoo, salt and balsamic vinegar

Method:

• start by boiling your potatoes and eggs (jammy eggs need 7 mins and 30 seconds)
• next, Blanche your green beans. Cook for 6-7 mins, drain and add to ice bath to stop cooking and keep their beautiful colour
• drain your tuna and assemble your salad In whatever order you wish, dress, toss and enjoy!

This is perfect to make when you don’t have a lot of time, want something that you can make in less than 20 mins & is packed with protein!
