Hearty Black Bean Chilli

What you need: 
  • 1lb of lean grass fed beef 
  • 1 small red onion
  • 4 cloves of garlic 
  • 2 19oz cans of black beans
  • 1/3 large can diced tomatoes
  • 1 can tomato paste
  • 2 tsp chilli powder 
  • 1 tsp cumin
  • 1 tsp paprika 
  • 1/2 tsp red pepper flakes 
  • 1 tsp salt 
  • 1 tsp maple syrup
  • 1 cup water
  • I cup whole wheat cous cous 

Method:

  •  to a pot over medium heat add evoo, chopped onion and sautéed for a few mins
  • add minced garlic and cook for another 1-2 mins 
  • add grass fed beef and cook through 
  • add drained black beans, tomatoes, tomato paste and mix until combined
  • add seasonings, water, mix. bring to a boil and reduce to a simmer for 30-40 mins 
  • while child is cooking, cook your whole wheat cous cous as per instructions on packaging 
  • to your child, add chopped broccolini, juice of half a lime and cook for another 10 mins 
  • remove, let cool & serve over whole wheat cous cous with some avocado, greek yogurt, fresh cilantro & squeeze of fresh lime juice and enjoy!
