What you need:
- 1lb of lean grass fed beef
- 1 small red onion
- 4 cloves of garlic
- 2 19oz cans of black beans
- 1/3 large can diced tomatoes
- 1 can tomato paste
- 2 tsp chilli powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp red pepper flakes
- 1 tsp salt
- 1 tsp maple syrup
- 1 cup water
- I cup whole wheat cous cous
Method:
- to a pot over medium heat add evoo, chopped onion and sautéed for a few mins
- add minced garlic and cook for another 1-2 mins
- add grass fed beef and cook through
- add drained black beans, tomatoes, tomato paste and mix until combined
- add seasonings, water, mix. bring to a boil and reduce to a simmer for 30-40 mins
- while child is cooking, cook your whole wheat cous cous as per instructions on packaging
- to your child, add chopped broccolini, juice of half a lime and cook for another 10 mins
- remove, let cool & serve over whole wheat cous cous with some avocado, greek yogurt, fresh cilantro & squeeze of fresh lime juice and enjoy!
