What you need:
- 1 lb salmon, skin removed + cubed small
- 1 cup cooled sushi rice (or jasmine)
- 2 tbsp sesame oil
- 1 tbsp soy sauce
- 1 tsp maple syrup
- 1 tsp dried onion flakes
- 1/2 cup cubed cucumber + avocado
- nori sheets
- sesame seeds
- spicy mayo
- salt to taste
- muffin tin
Method:
- preheat your oven to 375 + cut your nori sheets into squares (a little larger than the muffin insert)
- cubed your salmon into small pieces
- to a bowl add salmon, sesame oil, soy sauce, maple syrup, dried onion flakes + salt and mix until combined (you can also leave this to marinate for a few hours)
- to each nori sheet, add 1 tablespoon of rice and spread out
- transfer the square to your muffin slot, pushing down
- add salmon mixture - about 4-5 salmon cubes and fill each muffin slot
- bake for 15 mins and broil for 1-2 minutes to crisp up the salmon
- remove, let cool and add cucumber avocado mix
- finish with a drizzle of spicy mayo, sesame seeds and enjoy!
