Asparagus Soup

 

What you need:

2 1/2 lbs asparagus
1-2 onions - chopped 
2 garlic cloves - chopped 
extra virgin olive oil 
cups bone broth or veggie broth 
salt to taste
nutritional yeast 
lemon


Method:

clean asparagus and season with extra virgin olive oil & salt
to a parchment line sheet pan, add asparagus & into the oven at 410 for 18 mins 
while asparagus cooks, to a pan over medium heat, add oil & onions and cook for a few mins until translucent 
add garlic and cook for 2-3 mins - remove from heat
 once asparagus is done, to your blender add asparagus, onion + garlic, 3 cups of broth + salt and blend 
  taste & add salt if needed - at this point you can add more or less broth depending on the desired consistency
 add back to pan to heat up, pour and finish with nutritional yeast, a squeeze of lemon and enjoy!
