What you need:
- 1lb lean ground turkey meat
- 1/4 cabbage thinly sliced
- 2-3 carrots - shredded
- 1 tsp extra virgin olive oil
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp ginger powder
- 1/2 tsp chilli flakes
- salt to taste
- 4 tbsp tamari
- 2 tbsp rice wine vinegar
- 1 tsp sesame oil
- 1 tbsp maple syrup
- juice of one lime
- sesame seeds
- Boston bibb lettuce
- 3 tbsp chopped cashews
- 3 springs of oven roasted asparagus (see here)
Method:
- to a large skillet over medium heat, add evoo and turkey meat
- cook for 2-3 minutes and add, onion powder, garlic powder. ginger powder, chilli flakes and combine until 90% cooked
- add coleslaw + shredded carrots and combine - cook for 2-3 mins
- add tamari, rice wine vinegar, sesame oil, maple syrup and combine
- serve in a Boston Bibb or gem lettuce cup and finish with chopped cashews, asparagus, a squeeze of fresh lime juice & enjoy!
