15 Min Tuna Poke Bowl

What you need: 

  • 1 portion of tuna poke from Costco - this one
  • 3/4 cup jasmine rice 
  • handful arugula 
  • 1/2 cup cooked edamame 
  • 1 mini cucumber 
  • 2 tbsp avocado 
  • 1 tsp kimchi
  • 2 tbsp white vinegar 
  • flaked salt for edamame 
  • 1/2 tsp hemp hearts 

Method: 

  • thaw your tuna poke, cook your rice and edamame as per instructions on packaging 
  • in a bowl add arugula, rice, tuna poke, edamame, sliced mini cucumber, avocado and kimchi 
  • add white vinegar over top, finish with hemp hearts and enjoy!

Protein: approx 40-42g
