What you need:
- 1 portion of tuna poke from Costco - this one
- 3/4 cup jasmine rice
- handful arugula
- 1/2 cup cooked edamame
- 1 mini cucumber
- 2 tbsp avocado
- 1 tsp kimchi
- 2 tbsp white vinegar
- flaked salt for edamame
- 1/2 tsp hemp hearts
Method:
- thaw your tuna poke, cook your rice and edamame as per instructions on packaging
- in a bowl add arugula, rice, tuna poke, edamame, sliced mini cucumber, avocado and kimchi
- add white vinegar over top, finish with hemp hearts and enjoy!
Protein: approx 40-42g
