What you need:
- butter lettuce or live lettuce
- chicken from two thighs + drumsticks
- garlic powder
- onion powder
- salt
- 1/4 cup chopped celery
- 1/4 cup chopped royal gala apple
- 1/8 cup chopped red onion
- 2-3 tbsp golden raisins
- 1/3 cup no fat greek yogurt
- 1-2 tbsp honey dijon mustard
- 1/2 tsp sweet relish
- salt
- pepper
Method:
- pre-heat oven to 410 convection & line baking tray with parchment paper
- season your bone in chicken thighs & drumsticks with salt, garlic powder, onion powder & parsley flakes
- add to oven and cook for 30-40 mins (cooking time may vary)
- turn oven off and leave chicken to finish cooking for another 10-15 mins
- chop your celery, apple, red onion into small pieces making them uniform
- mix your greek yogurt, dijon mustard & sweet relish
- once cooled, shred oven roasted chicken & add to a bowl
- add honey dijon mixture and mix until combined
- add in chopped celery, apple, red onion, raisins & fold until combined
- to your butter lettuce add honey dijon chicken salad mixture and enjoy!
