Honey Dijon Chicken Lettuce Cups

What you need: 
  • butter lettuce or live lettuce
  • chicken from two thighs + drumsticks
  • garlic powder 
  • onion powder 
  • salt 
  • 1/4 cup chopped celery
  • 1/4 cup chopped royal gala apple
  • 1/8 cup chopped red onion
  • 2-3 tbsp golden raisins 
  • 1/3 cup no fat greek yogurt 
  • 1-2 tbsp honey dijon mustard 
  • 1/2 tsp sweet relish
  • salt 
  • pepper 

Method:

  • pre-heat oven to 410 convection & line baking tray with parchment paper
  • season your bone in chicken thighs & drumsticks with salt, garlic powder, onion powder & parsley flakes 
  • add to oven and cook for 30-40 mins (cooking time may vary)
  • turn oven off and leave chicken to finish cooking for another 10-15 mins
  • chop your celery, apple, red onion into small pieces making them uniform 
  • mix your greek yogurt, dijon mustard & sweet relish 
  • once cooled,  shred oven roasted chicken & add to a bowl 
  • add honey dijon mixture and mix until combined
  • add in chopped celery, apple, red onion, raisins & fold until combined 
  • to your butter lettuce add honey dijon chicken salad mixture and enjoy!
